
Everyone loves a good pudding..if you don't..well..we can still be friends but I'll just eat your share of the pudding like the good friend I am! ;P
I have made sticky date pudding before, years ago, but never a gluten free version.
How did making a gluten version come about you say? Well I was cooking dinner for a friend and they said their favourite dessert was sticky date. Challenge accepted! Yep, Barney style!
And thus I took on the challenge of making a gluten free sticky date that was good enough for a non-gluten and lactose free person. The result? I won. I slammed down that win and rocked it! I impressed that non-gluten and lactose free person with creating an amazing tasting sticky date.
I then made it for friends the next night and got the reaction 'I think this is the best sticky date pudding I have ever had, I think I am in love with you'. Yep. It's that good!
Serves 6
125g Medjool dates*, chopped
1/2 teaspoon bicarbonate of soda
3/4 cup boiling water
63g Nuttelex*, softened
1/2 cup brown sugar
1/2 teaspoon vanilla extra*
1 egg
1 cup gluten free self raising flour*, sifted
Butterscotch Sauce
1/2 cup brown sugar
150ml lactose free thickened cream*
1/4 teaspoon vanilla extra*
30g Nuttelex*
To Serve
6 scoops lactose free ice cream*
Preheat your oven to 180 degrees.
Grease 6 ramekins with some Nuttelex, and if you want to go the extra mile, dust with some flour too.
Grab your dates and bicarbonate of soda and put into a bowl, pour over the boiling water and let stand for about 5 minutes.
Using some arm power with nice sized spoon, beat together the Nuttelex, brown sugar and vanilla until it's all lovely and pale (if you're anything like me, try not to eat it ;P haha). Add the egg and beat until it's well incorporated.
Next fold through your date mixture, water and all, and the flour until it's all mixed together well.
Grab your prepared ramekins and divide the mixture between them. Bake those babies for 20-25 minutes or until you poke a skewer into their centres and it comes out clean. Leave to cool, then turn out and to cool further on a wire rack. (During the baking it is essential to lick the bowl clean...yes, we are still 5 year olds at heart! haha).
To make the butterscotch sauce, well, fake butterscotch sauce that is, combine all the ingredients in a saucepan over low-medium heat. Keep stirring until the sugar has dissolved and nicely combined. Bump up the heat to medium-high and bring to a boil, then reduce back down to medium-low and simmer for a couple of minutes until lovely and thick.
To serve this deliciousness, place the sticky date puddings on a plate each, slightly indent the tops with a spoon, top each with a good scoop of ice cream, and drizzle over that butterscotch sauce!! Serve and watch the joy on everyone's face as the dig into the amazingness! ;)
*Notes
- For all you non-gluten and lactose free people out there, you can just replace the Nuttelex, gluten free flour, and lactose free cream, with the normal stuff.
- You don't have to use Medjool dates, I know they are on the pricey side of things, I just really really love them. You can use dried dates, just make sure you soak them for a good 20 min or so, so those lovely things can get all moist and soft again!
- If you prefer, you can use vanilla bean paste instead of extract. I love vanilla bean paste but I didn't have any at the time so vanilla extra it was!
- Gluten free self-raising flours can vary from brand to brand, so just be aware that your result can vary depending on what you use :) just so you know I used White Wings Gluten Free Self-raising Flour when I made this recipe.
- For those not in the know of lactose free cream, there is Zymil Lite Thickened Cream (lactose free of coarse!) which you can find in the fridge section in Coles and Woolies (I'm pretty sure it's in Woolies, but I definitely know most Coles have it), and you also have Liddells Lactose Free Lite Thickened Cream which you can find in the aisle with the custard.
- For the ice cream I used Peters Lactose Free Creamy Vanilla, though Liddells now have a range of ice cream which is just as delicious!
